Bran Fruit Loaf just out of the oven

BRAN FRUIT LOAF

2 oz All-Bran cereal 50 g
2½oz Caster Sugar 75 g
5 oz Mixed Dried Fruit 150g
¼ pint Milk 150ml
2 oz Self Raising Flour 50 g
Good pinch mixed spice.

METHOD

1. Put All-Bran, sugar and fruit in a basin and mix well.
2. Stir in milk thoroughly, leave to stand for ½ hour.
3. Sieve in flour and spice mixing well.
4. Put into a well-greased, small (1lb) loaf tin.
5. Bake approx 45 minutes Reg 3.160ºC,325ºF.
6. Test with a skewer, comes out clean if ready.
7. Turn out immediately and allow to cool.

N.B. Cuts better if left till next day.
I prefer it spread with butter / Flora.
