Veggie Lunch

On the left, steamed asparagus on a slice of grilled eggplant topped with slices of hard-boiled egg, and drizzled with home-made vinaigrette.

VINAIGRETTE:

3/4 olive oil, 1/4 red wine vinegar, a splash of water, 2 tsp Dijon mustard, 2 tbsp Maggi sauce (or soy), 1 large clove of garlic pressed; herbs (dill, thyme, marjoram, basil, oregano, a bit of curry powder, whatever), salt & pepper.

On the right, vegetarian 'meatballs' (in this case Yumi's zucchini and lentil), on a bed of quinoa, topped with tomato sauce and sprinkled with shredded Parmesan.


QUINOA:

Quinoa of your choice (in this case tricolor) cooked per instructions, mixed with a kind of 'sauce' composed of olive oil, lime juice, Maggi sauce, finely chopped parsley, salt & pepper.


TOMATO SAUCE:

Any classic sauce, provided you make it yourself. Mine was simple: onion & shallot sautéd, 3 tomatoes, salt, pepper, Maggi sauce, herbs (basil, oregano, 'Italian') all cooked down and blended with a pressed clove of garlic at the end.
