My version……
3 ears sweet corn ( cooked cooled and cut off cob )
3 Ripe Haas Avocados cleaned and mashed
1/4 cup finely diced red onion
2-4 oz can mild diced green chiles ( hot if you prefer)
1 clove minced garlic
1/4 cup chopped fresh cilantro
1/2-1 whole lime juiced
Cotija cheese crumbles or grated ( to your taste )
Chili powder ( to taste )
1/2-1 tsp cumin powder
1 small can sliced Black Olives ( drained)
Tomatoes chopped
Mix it all together and adjust seasonings to your personal taste .
Top with extra olives tomatoes Cilantro and Cheese!
You can add a couple tablespoons of mayo for a more creamy texture.
NOTES…. Remember the more lime juice you add means your adding more liquid for a wetter dip!
Always make it your own!
Serve with your favorite tortilla chips and enjoy!
