Found some dried lima beans the other day—haven't had them for years—and finally got around to trying them:
Sauter a bit of white onion, shallot, garlic, and finely sliced chilli in some olive oil;
Add a couple (3-4?) sunchokes chopped into small chunks;
Add 4-5 tomatoes, finely diced;
Add a green bell pepper (capsicum) sliced into 2-3cm (1") strips;
Add the amount of pre-soaked lima beans of your choice;
Add a splash of V8 juice and a bit of tomato concentrate;
Season. I usually like:
Salt, pepper, bit of Maggi sauce, mixed herbs, savory, and
touch of curry powder for depth
Simmer, covered, until the beans are 'al denté'. Reduce uncovered, if need be—still at medium heat—until the mixture has the consistency you want.
Add 1/2 sliced red onion at the last minute before serving.
