Let’s get ready to crumble *RECIPE*

Rhubarb crumble and custard, made with locally grown organic fruit (so the calories don’t count) 😋

500g rhubarb, chopped into 1-2 inch lengths
100g golden caster sugar
3 tbsp water
140g self-raising flour
85g butter, chilled
50g light brown muscovado sugar
50g chopped walnuts (optional)

Put the rhubarb, sugar and water into a pan, cover and simmer very gently for about 15 minutes or until the rhubarb is soft but still holding its shape. Pour into a medium baking dish.
Heat the oven to 200°C.
Put the flour and butter in a bowl and, using fingers, rub together to make a soft crumbly mixture. Add the muscovado sugar and nuts and use hands to mix together.
Sprinkle the topping over the rhubarb and bake for 30 minutes, until golden brown on top.
Serve with vanilla custard.
