Dulce de leche:
Pour a can of condensed milk into a square baking tin. Place tin in a larger baking tin. Half fill the larger baking tin with hot water halfway up the sides. Cover with foil and bake at 210C for 1 to 1 1/2h until dulce de leche is caramelized browned. Stir and let cool completely. Measure our about 1 cup of dulce de leche
Fudge brownies:
225g dark chocolate, chopped
110g unsalted butter
3/4 cup sugar
3 eggs
2 tsp vanilla extract
3/4 cup flour
1/2 tsp salt
1. Melt butter and chocolate in a large bowl in a microwave, stirring constantly every 30 s until melted. (Alternatively melt over a double boiler.
2. Whisk in sugar until combined. Add eggs one at a time until combined. Add in vanilla.
3. Sift together salt and flour into a bowl. Add flour all at once into brownie mixture, stirring until flour is completely incorporated and batter looks shiny and smooth.
4. Pour half the batter into 8 inch square baking tin and add spoonfuls of dulce de leche over surface of batter. Add remaining batter on top of dulce de leche. Add more dulce de leche over the top of the batter. Swirl the dulce de leche into the brownie with a toothpick. Dont overmarble.
5. And bake at 175C for 45-50 min until surface is dry and set but toothpick inserted into the centre comes out with a few fudgy crumbs. Let cool completely.
