Lentil Soup

Ingredients
2 cups dry lentils
2 quarts vegetable or chicken broth
1 onion, diced
1 14.5oz. can corn
3-4 carrots sliced (1 cup)
1 6oz. can tomato paste
2 cloves garlic, minced (*I usually use more)
¼ teaspoon ground cumin (*I usually use 1/2t)
(*can add other veggies such as celery, if desired)
Directions
1. In a large saucepan combine lentils, broth, onion, tomato paste, garlic and cumin. Bring to a boil, then reduce heat, cover and simmer until lentils are soft, 30 to 45 minutes.
Yield: 8 servings
