I dreaded the idea of using baking yeast, or yeast of any variety to make this bread. Yeast and I have a bad baking history. I did some research regardless, started a starter ( a mixture of flour & water) and within a few days armies of yeast and bacteria could be seen bubbling away. I watched it carefully like a mother, feeding and caring for it.. and I was hooked..
After a few incredibly sad attempts at making a simple sourdough loaf, almost on the brink of giving up, I found my source of error and began to make lovely lovely loaves!
Thus, the bread baking journey begins !
