Palmiers, Two ways

Palmiers, Two ways


To demonstrate the versatility (and ease!) of using store bought pastry (my little brother wanted to learn new recipes and techniques that he could incorporate into his cooking repertoire), I thought what better way than to show him how something simple can turn into many types of deliciousness.



We searched through part of my jam and preserve pantry, went through some of my baking stash and made these (rather, little bro was keen on pretty much trying to cook everything I was teaching, so I let him at it. Not bad for his first try. I can attest that the taste is good).



Here was fig with sliced almonds, apricot with spice palmiers both coated with a cream wash and coarse golden sugar. In the back, tarts and other treats I had made earlier.

My little brother and I decided to do a simple siblings Christmas Eve dinner together (the rest of our family is out West), but instead of heading out or my cooking up a storm, MS wanted to "learn" how to cook some more dishes to add to his repertoire.



So what's a sister to do? :) I put him to work, of course!



Well, with assistance (I'm not that crazy. I have to eat this stuff too. :P ).



So I chose a couple techniques that he could follow, that might be relatively simple, but new, and that would produce good, tasty results.



Besides showing MS the magic of store bought puff pastry (for delicious Parmesan-prosciutto-mustard pastry twists; then jam, nut and preserve filled palmiers); simple spread-bread-veggies platter; we did a carbonara (with twirly large pasta noodles - I like shapes and so does little bro) with sous vide egg (62-degrees); "dry age" simulated beef rib roast; and various pastries.



Not to bad given that he can take the information, tweak it to his own style to impress dates and friends. In fact, MS had snap chatted (?) shots and videos of our evening and already had requests to make courses for an upcoming dinner party.



I love knowing that there's applicability in sharing even basic cooking knowledge (and deliciousness too), but also to know that my little brother is starting to cook better on his own.



Maybe one day I won't have to assist any longer and just sit to enjoy. :)
