Exposed: Young Coconut

Coconut comes in a variety of preparations, one of which is a cylinder, inside, encapsulated Bourbon cream, which when cracked, gushes out over buttermilk cake, pistachio crumble (separated by a gel), sweet cicely herbs and meringue.



A bit herbaceous and actually not a very sweet "first" dessert dish. Kind of like how bourbon is rounded and smooth, but mellow and not too sharp.
